Chef Jeff Bland is one of only two Michelin-star holders in Edinburgh; what’s on offer is haute cuisine served in an overtly upmarket subterranean dining space within the five-star Balmoral Hotel. Lunches are (just about) affordable for a taste of the artistry; for a bravura performance there’s a six-course tasting menu, with dishes such as foie gras poached in port, for £60. Very expensive.
