Let the revolution begin
A thirst to bring quality with a modern twist inspired Scott Murray to establish Olobar, the business responsible for creating Bar One and the recent refurbishment of Dows Bar & Bistro, which are both based in Inverness.
Starting out in the hospitality industry as a young teenager Scott, who is originally from Forres, has brought inspiration from Malaysia, Italy, Singapore and New York to his business.
In addition to the Highland bars he has recently invested in the five-star Nikki Beach hotel and beach
club resort in Phuket, Thailand.
“Olobar is passionate about designing bars that offer a night out with a difference,” Scott said.
Having spent three years on the bar scene in Edinburgh, Scott has brought tried and tested systems to the area with success. Established seven years ago, Olobar has also successfully revamped The Eagle hotel, in Dornoch.
Keeping it firmly in the family, Scott’s brother Grant is the general manager at Bar One and Scott first met his business partner, Kenneth Loades, at the Corriegarth where Kenneth once worked as head chef.
Keen to make the most of what the area has to offer, Olobar uses local suppliers for fruit and vegetables and routinely utilises local contractors for refurbishment and maintenance work. Olobar employs 60 staff in total.
“We’re passionate about delivering quality in the best possible environment and it’s great to be able to bring a hint of international flair to the heart of the Highlands,” Scott said.
